Changes to obtaining a Food Service Sanitation Manager Certificate (FSSMC).

Currently: The State of Illinois requires a 15-hour training class and exam to initially obtain your Food Service Sanitation Manager Certificate.

Effective July 2014: The State of Illinois requirement to obtain an initial certification will be an 8-hour class and exam.

Food Service Sanitation Manager Course
Instructor: H. McKibbon
Class meets state requirements and is designed to prepare students for the FSSMC exam for the State of Illinois. An optional textbook will be sold in class for $20. Separate payment (checks payable to Black Hawk College – no cash please) for optional textbook will be collected at first class. Certification examination will be given at the end of the last day of class. Class will break for a 30-minute lunch each day (on your own). Please bring a current photo ID to class.

Per the Illinois Food Handling Regulation Enforcement Act (410 ILCS 625), amended per SB1495 – beginning on July 1, 2014 the training hour requirement for the Food Service Sanitation Manager Certificate (FSSMC) course is reduced from 15 hours to 8 hours inclusive of the exam.

Food Service Sanitation Manager Course

An optional ServSafe book will be sold in class for $5. Separate payment (checks payable to Black Hawk College – no cash please) for optional book will be collected at first class. Changes to obtaining a Food Service Sanitation Manager Certificate (FSSMC).

Currently: The State of Illinois allows a 5-Hour Refresher Class option every five years to renew your certificate.

Effective July 2014: A student must take an 8-hour course and exam every five years. The 5-hour refresher course will no longer be offered after June 30, 2014. The last refresher class offered by Black Hawk College will be June 17, 2014.

An additional amendment pending to this Act says a student whose IL FSSMC license expires July-December 2014 or January-June 2015 is still eligible to take the refresher course as long as the student takes the class 12 months prior to the license expiration date. Any student who’s IL FSSMC expires after June 30, 2015 will have to take the 8-hour course and exam.

5-Hour Refresher Course

Course meets state requirements. Holding times, cooking temperatures, receiving, storage and preparation information will be stressed. Please bring to class a menu from your food establishment and your Food Service Sanitation Manager license number. Classes will break for a 30-minute lunch (on your own).

Food Handler Training
Per the Illinois Food Handling Regulation Enforcement Act (410 ILCS 625), amended per SB1495 – all food handlers, other than someone holding a FSSMC license, must receive basic safe food handling principles training within 30 days after employment.

All food handlers working in an establishment where food is intended for immediate or on site consumption shall have training completed by July 1, 2014. The training certificate is valid for three years. Enforcement will be limited to notification and education July 1-Dec. 31, 2014.

All food handlers working in non-restaurants (a kitchen in a nursing home, licensed day care home or facility, hospital, school, long-term care facility, or a retail food store), shall have training completed by July 1, 2016. Non-restaurant employees are not required to take another food handler training unless they go to work for another employer.

Food Handler Training – Online
Food handlers may take the online ServSafe Food Handler Course and Assessment in the computer lab at the Outreach Center. There is no instructor in the lab. You work on your own through the course and assessment and have the option of taking the online program in English or Spanish. Please bring ear buds with you as to not disturb others.

Food Handler Training – Instructor Led

If you are not interested in taking the course and assessment online, another option is the instructor-led class. The ServSafe Food Handler Guide is included with the cost of the class. You will take a 40-question assessment at the end of class.
